Boxes with Elegance
I made my first steps into the pastry world in Argentina where I attended the renowned OTT College and got my degree in gastronomy and pastry.
I moved to Italy in my early twenties where I continued to learn the art of Italian pastry. In 2008 I brought this knowledge to London, where I used and expanded it as a pastry chef in Locanda Locatelli, a Michelin star Italian restaurant, learning new things with head pastry chef Ivan Icra Salicru. My career continued in Nobu, the high-end Japanese Peruvian restaurant, where I learned the art of fusion.
Throughout my time in London, I took numerous courses on pastries and desserts with masters like Peggy Porschen, Yann Duytsche at L’Ecole Valrhona France, Antonio Bachour, Melissa Coppel, Karina Rivera, Silvia Favero and others.
The vast knowledge acquired trough the years allowed me to enter the famous BBC Creme de la Creme competition where together with my team we entered the semi-finals in 2017. My career then took a turn into the world of contract catering, where to this day I work as a head pastry chef in the City of London. It allows me complete freedom to experiment and design new desserts all the time, creating what was always my dream, art on a plate.
